This coconut, date, and almond milk smoothie is one of my favorite weekend breakfasts, especially for lazy mornings when I’m craving something sweet.
This recipe is super simple and easy to prepare. The most important thing to remember when making this is to finely chop your dates. Speaking from experience on this one! Whole dates will get stuck in the blender, and large chunks make it difficult to drink this smoothie through a straw. It took me a few tries to determine that small-but-still-chewable date pieces (about 1/4″ square) work best for this recipe.
I’ve always loved Mallo Cups. Every Halloween, I was the weird kid who bypassed the Snickers and Twix and Milky Way in search of these tasty, old-fashioned marshmallow treats.
Maybe it’s my central Pennsylvania upbringing. (Mallo Cups are made by Boyer Candy, based in Altoona, PA.) Or, maybe it’s because I love all things coconut. Either way, Mallo Cups are the perfect blend of delicious milk chocolate, gooey marshmallow, and crunchy coconut. And yet, they’re sadly underappreciated when it comes to classic candies. They fall second perhaps only to the 100 Grand bar which, like the Mallo Cup, is difficult to find at any time of the year other than Halloween.
