Full disclosure: These just might be the best brownies I’ve ever made.
A fudgy, chocolate-y brownie filled with cherries and topped with layers of melted chocolate, cherry buttercream frosting, and miniature chocolate chips, they taste just like a classic cherry cordial.
I started with my go-to brownie recipe (the same base recipe used to make my dark chocolate mint brownies) then added chopped dried sweet cherries, cherry flavor oil, and a hint of pink food coloring for visual appeal. If I made these brownies again, I might try adding chopped chocolate covered cherry cordials to the batter. However, they are delicious just as is!
A few notes on these brownies:
I made the buttercream frosting using my trusty Lorann Oils, in classic cherry flavor. Since it’s an oil rather than an extract, I only needed a very small amount (about 1/4 tsp) to give the frosting a nice, robust cherry taste. However, you could also use a cherry flavor extract (like this one by Watkins) but you’ll need more product, since an extract is less powerful than an oil.
