This three ingredient fudge is a quick way to satisfy a craving. An easy fudge recipe made with sweetened condensed milk, mini marshmallows, and chopped milk chocolate.

What is Three Ingredient Fudge?

Fudge has always been one of my favorite candies. I love all varieties, from English clotted cream fudge to the high-end candy shop stuff. I even love the sugary peanut butter kind sold at school bake sales. And no trip to Rehoboth Beach would ever be complete without a box (or two!!) from The Candy Kitchen on the boardwalk. (I’m partial to their maple walnut! And the vanilla, the butter pecan, the chocolate cheesecake….) And, well, you get the point. I like fudge.

I love making traditional fudge recipes, but on days when I find myself short on time when a fudge craving hits, I’ll make this easy fudge recipe instead. Just three ingredients, and no special equipment required. (In contrast, more traditional fudge recipes combine ingredients like sugar, milk, butter, and cocoa powder, and generally require a candy thermometer.) It takes just 15-20 minutes or so to prepare the fudge, plus an hour to chill in the fridge before it’s ready to eat.

Why Make This Easy Fudge Recipe?

This three ingredient fudge is more of a fudge-inspired treat. It won’t replace the real thing, but it will satisfy an emergency chocolate fudge craving, in the same way that a mug cake satisfies a craving for cake. (You know the scenario: It’s late at night, you only have a few ingredients on hand, and you just really need a sweet treat. We’ve all been there!) The results of this simple fudge recipe are less sweet, and quite a bit less dense, than traditional fudge, but it’s perfect in a pinch.

Easy Fudge Tips and Tricks

I suggest applying nonstick spray to the parchment-lined tin, as well as your spatula (for pressing the fudge mixture into the tin) and chef’s knife (for slicing the fudge). Because of the sticky marshmallow, it’s good to have a bit of grease to make things a little bit easier.

When adding the marshmallows to the chocolate-condensed milk mixture, don’t stir with a whisk! While a whisk works perfectly for combining the chocolate and condensed milk, you’ll need to switch to a spoon to stir in the marshmallows, Otherwise, you’ll find yourself plucking mini marshmallows from your whisk, one-by-one. (Trust me, I learned the hard way!)

Make sure your sweetened condensed milk is at room temperature, not cold. If you’ve stored the can in a cold place, allow it to come up to room temperature. If the milk is too cold it can cause the chocolate to seize.

After combining the milk and chocolate, remove the bowl from the heat and allow it to stand for about five minutes. Allowing the chocolate to cool slightly prevent the marshmallows from melting.

How to Store Three Ingredient Fudge

Three ingredient fudge will keep well for several weeks. To store, layer fudge squares between sheets of parchment and store in an airtight container in the refrigerator.

Description

This three ingredient fudge is a quick way to satisfy a craving. An easy fudge recipe made with condensed milk, mini marshmallows, and milk chocolate.


Ingredients

340 grams chopped milk chocolate or chocolate chips (12 ounces, or about 2 1/3 cups)
400 grams sweetened condensed milk (1 14-ounce or 400-gram can)
100 grams mini marshmallows (2 cups)

Nonstick spray, for coating tin, spatula, and knife


Instructions

Line an 8 x 8-inch square tin with parchment. Spray generously with nonstick spray.

Melt the chocolate over a bain marie or double boiler.

Whisk in the sweetened condensed milk, and continue whisking until thick and creamy.

Remove from heat. Allow chocolate to cool for 3-5 minutes, then whisk again.

With a plastic or wooden spoon, stir in the mini marshmallows.

Pour mixture into prepared tin. Use a greased rubber spatula to distribute the fudge equally across the surface of the tin, and push it into the corners. Tap the pan on the countertop to help the mixture settle.

Transfer to the refrigerator to chill for at least one hour.

Remove fudge slab from the tin and use a sharp, oiled chef’s knife to cut it into squares. I cut mine into 36 pieces (6 rows x 6 rows) but feel free to make your fudge squares as large or small as desired.

Store leftover three ingredient fudge in the refrigerator in an airtight container for up to two weeks.
